Francoise Antech, a native of Limoux, lives and breathes the region. She is the 6th generation winemaker at Antech, and is passionate about maintaining what her family started, like preserving and championing Mauzac, while also moving the region forward (she founded Vinifilles, an organization bringing together women winemakers in Occitanie). The M 3.0 is a newer cuvee for Antech and is an exploration of Mauzac, which put Limoux on the map. The "3.0" is sourced from Antech's best Mauzac grapes, all hand-harvested; the secondary fermentation is done using Mauzac must (unfermented Mauzac juice) and then aged on the lees for 3 years. This wine is technically bone-dry and thus has very racy acidity and freshness - a great pivot for those who love bone dry Champagne.
Aromas of grushed green grass and pear aromas, but it's the acidity that makes this wine shine. Lime zest, tarragon, chervil, and melon rind. Super focused and crisp, yet still delicate.
